Parsley dumplings with chicken and peas soup

Ingredients:

For this recipe you would need 6 ounces of biscuit dough, 2 large spoons of fresh parsley, finely chopped, 2 cans of chicken broth, 2 cups of chicken finely shredded, 1 cup of water, 1 cup of fresh or frozen peas, 1 cup of carrots and ½ cup of brown rice. For seasonings, you would need salt, pepper and dried oregano.

Recipe:

Knead the biscuit dough to make it soft and mix the finely chopped parsley in it and knead well. Make small balls out of this dough and keep aside. Then in a pot add the chicken broth, oregano, shredded chicken and water and bring to a boil. Now add the peas and carrots and keep boiling. Put the dough balls into the pot, one by one and cover the pot and let them cook. Once cooked, serve hot and add the salt and pepper from the top.

Mexican wraps with beans and chicken

Ingredients:

For this recipe you would need olive oil, 1 sliced onion, 1 clove of crushed garlic, a pinch of chili powder, 1 spoon of tomato puree, 2 freshly cut tomatoes, 1 can of red kidney beans cooked, 1 cup of boiled shredded chicken, ½ of each, julienne red, green and yellow bell peppers, 5 tortillas, grated cheese and salt and pepper to taste.

Heat the oil in a pan and add the sliced onions, fry them well and then add the garlic and chili powder to the onions. Then add the cut tomatoes, tomato puree and the kidney beans and shredded chicken to the pan. Now add salt to this for taste. Cook this until the juice from the tomatoes reduces and this mixture thickens. Take another pan and fry the bell peppers in some oil. Then place a tortilla on a plate and add the beans mixture in the center, in a vertical line. Now place a few julienne of the bell peppers on top of this and cover with grated cheese. Roll the tortillas and place on a baking dish. Then place this in the oven and cook for 20 minutes. The cheese would melt and this would be a great dish to eat.

Peas with cheese and chicken

Ingredients:

For this recipe you would need a cup of peas, cooked until they are soft, 1 large spoon of butter, 1 cup of grated parmesan cheese, 1 tablespoon of lime juice, and 1 cup of small cubes of boneless cooked chicken, white pepper and salt to taste.

For this, you need to cook the peas in water until they are soft. Do not throw away the water after draining out the peas. Then in a pan add a cup of these peas cooked water and add the peas to it. Add the butter to this and wait until it melts completely. Now add the cubed chicken to this and the parmesan cheese. The cheese would melt and coat the peas and chicken completely. Now add the lime juice and white pepper to this. If you want a thinner consistency, add more of the peas stock. If not, serve hot with coriander leaves on top.

Onion greens and sesame coated chicken

Ingredients:

For this recipe, you would need 1 cup of diced chicken, 2 large table spoons of milk, 2 egg whites, half a cup of dried break crumbs, 1 spoon of black and 1 spoon of white sesame seeds, onions greens roughly chopped and some of them kept as long 2 inch length sticks, salt and pepper to taste.

Heat a pan and place the dices of chicken on it. Keep turning them over and over until they turn light brown. Remove from the pan. In a bowl mix the egg whites and the milk and whisk gently to form a broth. Then add salt and pepper to this mixture. In a large plate, spread the black, white sesame seeds and the bread crumbs. Mix them up. Then pick up one piece of the chicken, dip it in the egg whites and milk mixture, then roll it in the sesame plate and fry it in a pan with little sesame oil. Once all the chicken pieces are placed in the pan, add the chopped onion greens to this and coat the chicken pieces with them. Then in a plate place 4 of the onion green stems next to each other and place 1-2 pieces of the chicken on them. Serve hot.

White beans with pasta and grilled chicken

Ingredients:

For this recipe, you would need grilled chicken cut into long strips. 1 cup of cooked white beans, half a cup of chopped onion, 1 cup of chopped mushrooms, 2 spoons of chopped garlic, 2 cups of cooked pasta (any kind will do), half a cup of parmesan cheese, fresh basil leaves and salt and pepper to taste.

Heat some oil in a pan and fry the onions and mushrooms in it. Cook till they turn tender. Then add the white beans, strips of grilled chicken, basil and garlic. Now add the cooked pasta to this mixture and toss well. Serve with parmesan cheese salt and pepper on the top.

Black eyed peas salad with chicken and veggies

Ingredients:

For this you would need 1 cup of black eyed peas, 1 cup of shredded or minced cooked chicken, veggies like diced carrots, green beans, onion greens, bell peppers, tomatoes. All these veggies should be slightly cooked and chopped up well. 2 table spoons of lime juice. Salt and pepper to taste and some olive oil.

Mix all the ingredients in one bowl. Add the lime juice to this salad and mix well. Then in a small cup add the salt and pepper to the olive oil and mix well. Now add this dressing to the salad and mix. Serve with tortillas.

Lentil and minced chicken stuffed peppers

Ingredients:

For this recipe, you would need 2, small red and green bell peppers, 1 small sized onion chopped, 3 cloves of garlic crushed, half a cup of mushrooms, finely chopped, a quarter cup of red lentils, cooked well, 1 cup of cooked minced chicken, shredded parmesan cheese, 2 spoons of lime juice, 1 teaspoon of dried oregano, 3 table spoons of tomato puree and salt and pepper to taste.

Recipe:

Heat oil in a pan and add the chopped onions, cook till tender and then add the mushrooms and the red lentils. Mix well and cook with lid. After 5 minutes, add the mince chicken and the tomato puree to the pan. Cook till the water content is completely dried out. Then add the lime juice, oregano, salt and pepper. Mix well. Remove from a pan and let it cool. Cut the top of the bell peppers and remove the seeds. Then fill the earlier made mixture inside the peppers and cover with parmesan cheese. Bake for 5 mins in the oven.

Lima beans and chicken salad

Ingredients:

4 cups of lima beans, 1 cup of chopped cucumber, 1 cup of bell pepper chopped, 1 cup of cooked chicken diced, 1 cup of feta cheese cubes, and 1 cup of onion chopped. For the dressing, you would need olive oil, lemon juice, red wine vinegar, dried oregano, salt and black pepper powder.

Recipe:

Mix all the salad ingredients in a bowl and in a separate bowl mix olive oil with salt and pepper. Add this dressing to the salad and serve.

Diced chicken and green beans stir fry

Ingredients:

1 cup of diced chicken, a handful of green beans, soya sauce, garlic chopped finely, brown sugar, apple cider vinegar, sherry, grated ginger, 1 spoon of corn starch, salt to taste and a spoon of Jalapeno slices.

Recipe:

Marinate the chicken cubes with some soya sauce, garlic and salt. Place this in the refrigerator. Then wash the beans and saute them in a large pan in some oil. Remove them once cooked about 90 percent. Then in a bowl, mix the soya sauce, chopped garlic, brown sugar, apple cider vinegar, sherry, grated ginger and mix well. Now add the corn starch and mix well to remove all lumps formed. Now heat some oil in a pan and add the marinated chicken to it. Cook well and add the sauce to this. Boil this sauce till it thickens. Then add the salt and jalapeno slices. Now add the beans and toss till the sauce coats the beans well. Serve hot with rice.
